If you are looking to create custom experiences for large touch displays, I'd strongly suggest to look into the authoring software IntuiFace by http://intuilab.com.

We have been using IntuiFace for a variety of touch screen projects, and it doesn't require previous coding knowledge. Having some graphic design skills will help, though.

Check out this very simple demo that I made featuring a carousel asset loading thumbnails and virtual tour links from an Excel database.
